Following the restoration of this 17th-century former tannery, which transformed it into one of the most beautiful houses in Wallonia, L’Essentiel took on new ownership following Benoit Gersdorff’s departure, leaving Raphaël and Bénédicte Adam in charge. New faces front of house, then, but Raphaël had already worked in the restaurant for several years, absent only occasionally for visits as chef to the Vernet Hotel in Paris, Sea Grill in Brussels and Plage d’Amée in Namur. Now, Raphaël offers his discerning customers one of most best ‘price-pleasure’ ratios that we know of – and the cellar, overseen by Wine Master Michel De Muynck, is just one more reason to delay your next visit not a moment longer.
